IN & OUT SMASHBURGER TACOS

For the Burger Sauce:

Combine 1/2 cup mayonnaise, 3 tablespoons ketchup, 2 tablespoons sweet pickle relish, 1 1/2 teaspoons sugar, and 1 1/2 teaspoons distilled white vinegar in a small bowl. Stir until well combined and set aside.

For the Smashburger Tacos:

1. Heat a griddle over medium-high heat. Divide the beef into 4 equal portions. Season each beef portion generously with salt and pepper before cooking for 2 minutes on the hot griddle.
2. Place one tortilla on top of each beef portion on the griddle and use a spatula to press down firmly, flattening the beef into a thin patty. Cook for another 2-3 minutes until the beef is cooked through and the tortilla is slightly crispy.
3. Carefully flip the beef-tortilla combination. Immediately top the beef side with a slice of American cheese, a sprinkle of lettuce, caramelized onions, bacon bits, and a generous dollop of your prepared burger sauce.
4. Fold each tortilla in half like a taco and serve immediately while hot. Enjoy!
