Honey Chipotle Fried Chicken Sliders

Cut chicken into 6 portions. Combine buttermilk, pickle juice, chipotle, and seasonings. Add chicken, cover, and marinate for at least 2 hours. Mix all coating ingredients in a separate bowl. Dredge chicken in flour mixture, dip back into marinade, then coat in flour again. Press firmly to create a craggy crust. Rest 5–10 minutes. Heat oil to 350–355°F. Fry chicken for 5–6 minutes or until golden, crispy, and cooked to 165°F internally. Drain on a wire rack. Simmer glaze ingredients over low heat until slightly thickened and glossy. Toast slider buns in butter until golden. Spread ranch on the bottom buns, add crispy chicken, drizzle with honey chipotle glaze, top with pickles, and serve!
