Duck à l’Orange Sandwich

1. Cook the Duck: Score the duck fat, then season with salt and pepper. Cook fat-side down in a pan for 5-7 minutes until crispy, then flip and cook for 3-4 more minutes. Baste the duck with butter, rosemary, and garlic while it cooks. Let the duck rest for a few minutes before slicing.
2. Make the Orange Sauce: In a saucepan, simmer the fresh orange juice, sugar, white wine vinegar, orange zest, and chicken broth. In a small bowl, whisk together 1 tbsp cornstarch and 2 tbsp water to create a slurry. Add the slurry to the simmering sauce to thicken, then remove from heat.
3. Assemble the Sandwich: Spread garlic mayo on one slice of bread. Layer arugula, the sliced duck, a generous amount of orange sauce, and Lay’s chips on top. Cover with the other slice of bread and serve immediately.
