Crispy Chicken Homemade Alfredo

️⃣ Finely dice the shallot, jalapeño, and garlic, then set them aside.
️⃣ Finely chop the fresh basil and broccoli, and set them aside.
️⃣ Slice the chicken breasts in half or pound them flat. Season the chicken with your desired seasonings. Dip the chicken into the flour, egg wash, and breadcrumbs mixture, ensuring it is well-coated, and then set it aside.
️⃣ I heated the peanut oil to 375 degrees Fahrenheit and fried my chicken for about 3-4 minutes, using a thermometer to ensure they reached an internal temperature of 165 degrees Fahrenheit.
️⃣ To make the Alfredo sauce, start by sautéing the shallot, jalapeño, and garlic in butter or oil for a few minutes until the shallots begin to sweat and the garlic becomes fragrant. Add about 2 tablespoons of flour and cook for an additional 3-4 minutes to eliminate the raw flour taste. Deglaze the pan by adding a bit of chicken stock and let it thicken slightly. Season at this point to start building the flavor.
️⃣ Pour in the heavy whipping cream and adjust your seasoning. Allow it to simmer until it reduces slightly and thickens. Now is a good time to add some extra Parmesan and it helps the sauce to thicken more! Add the broccoli and basil at this point as well.
