Bacon Jam Firecracker Smashburger

For the Bacon Jam:

1. Cut the thick-cut bacon into half-inch slices and add them to a large frying pan.
2. Cook over high heat for about 10 minutes, stirring frequently. Once finished, remove the bacon from the pan.
3. Pour out all but 1 tablespoon of the bacon drippings from the pan.
4. Add the thickly sliced sweet onions to the pan and cook for about 8-10 minutes. Then reduce the heat to low.
5. Add the brown sugar and stir until the onions have caramelized, about 20 minutes.
6. Add the reserved cooked bacon, coffee, and water to the pan. Increase the heat to medium.
7. Stir about every five minutes until the onions are thick and jam-like, which will take about 30 minutes.
8. Remove from the heat and stir in the balsamic vinegar. Season with salt if necessary.

For the Firecracker Sauce:

1. In a bowl, combine 1 cup mayo, 1/4 cup sweet chili sauce, 1/4 cup Sriracha, 2 tbsp. honey, and 1 tsp soy sauce. Mix well until smooth.

For the Smashburger Assembly (Bottom Up):

1. Place the bottom bun on your serving plate.
2. Spread a generous layer of Firecracker Sauce on the bottom bun.
3. Add lettuce.
4. Cook your Wagyu Patties to your desired doneness and place on top of the lettuce.
5. Top the patty with American Cheese.
6. Add hashbrowns.
7. Spoon a generous amount of Bacon Jam on top of the hashbrowns.
8. Drizzle more Firecracker Sauce.
9. Complete with the top bun.
