AUTHENTIC PHILLY STEAK AND CHEESE

1. Preheat oven to 400°F. Create a bacon weave by laying 6 slices of bacon side by side and then weaving the remaining 6 slices through them. Bake until crispy, about 15-20 minutes. Set aside.
2. Heat olive oil in a large skillet over medium-high heat. Add the sliced onions and peppers, cooking until softened, about 5-7 minutes. Remove from skillet and set aside.
3. In the same skillet, add the thinly sliced ribeye steak. Season with salt and pepper. Cook until browned, about 3-4 minutes.
4. Mix the cooked vegetables with the steak in the skillet.
5. Lay slices of provolone cheese over the steak and veggie mixture, allowing it to melt.
6. Toast the hoagie rolls if desired. Divide the steak, veggie, and cheese mixture among the rolls.
7. Top each sandwich with a strip of the bacon weave and a generous handful of crushed Doritos for an extra crunch.
