Authentic Carne Asada Steak Fries

1. Make the Fries: Peel and cut potatoes into thin fries. Soak in cold water. Pat dry, then fry in hot oil (350°F) until golden and crispy. Season with salt immediately after frying.
2. Prep and Cook the Carne Asada: Mix olive oil, lime juice, soy sauce, chili powder, cumin, minced garlic, salt, pepper, and mole sauce in a bowl. Add steak and marinate for at least 30 minutes. Cook the steak on high heat (grill or skillet) for 4-5 minutes per side, until medium rare. Let rest, then slice thinly against the grain.
3. Assemble the Fries: Layer fries on a serving platter. Sprinkle cheese over hot fries to melt. Add sliced carne asada, then dollop guacamole and sour cream on top. Spoon pico de gallo and mole sauce over the fries. Add jalapeños and cilantro for garnish.
